Pickled onions are a nice way to add color and flavor to dishes. I love this recipe because it’s tangy, a little spicy, and herby.

Ingredients
1 red onion
1 cup apple cider vinegar
1 cup water
1 1/2 teaspoon salt
1 TBSP sugar
Peppercorn
2 bay leaves
Tsp of pepper flakes
2 garlic gloves crushed
Thyme springs
oregano
Directions:
To make the brine, in a small pot, combine apple cider vinegar, water, salt, and sugar, and allow to come to a simmer. In the meantime, slice your onions and place them in your jar along with crush garlic gloves, few thyme springs, pepper flakes, bay leaves, and pepper flakes. Lastly add your brine to the jar
